安徽的饮食文化特点每日一日三餐，早餐城镇居民多吃大米稀饭，辅之以各种早点，如大馍、油条、包子(肉包、糖包、豆沙包)，糯米粉做的糍糕、烧麦及烤山芋等。农村群众早餐吃干饭。中餐和晚餐城镇居民大都吃干饭，在农村农忙时期，一般都在早饭后带上干粮上工，还要顺便带些咸菜和一瓶开水。中午就不回家吃饭。农村晚餐有干有稀。夏天晚上，多在农家的禾场上吃饭。一张小桌，放上几样小菜，全家人围桌而坐。到了冬天的晚上，堂屋的火塘里燃着熊熊的炭人，火锅内煮着两三样菜蔬，叫“一锅熟”，火塘边烤着玉米粑或米粉粑。全家围火塘而坐，边烤火，边吃晚餐。城乡群众对晚餐都比较重视。豆制品是皖中、皖南人民喜爱的食品。制品有豆腐、白干、酱干、臭干、千张、豆腐果、油炸泡、素鸡(用酱油、千张包扎成卷)、豆腐皮、豆腐脑等。其中八公山的豆腐、豆腐脑，马鞍山的采石茶干，和县、屯溪的酱油干驰名省内外。芜湖市的煮干丝，合肥的油炸臭干子是著名风味小吃。另外豆制品也可同鱼、肉一起制做成可口的荤菜，如：鱼头烧豆腐、银鱼煮干丝、干子炒肉丝(片)、豆腐(干子)烧肉等，既是家常菜，又可侍客。皖北地区是指淮河以北的宿县、阜阳两地区和淮北市一带。这一地区的饮食习俗与皖中、皖南迥然不同，但沿淮一带如蚌埠、淮南等地又与其有相似之处。主食——皖北是以生产小麦、玉米、高粱、山芋、豆类等杂粮为主的地区，因此这一地区的群众以面食、杂粮为日常主食，一般是收啥吃啥，随季节而异。在麦收季节皖北俗语有所谓“滚子响，鏊子热”，群众日常吃的主要是麦面制品，有馍馍、烙饼、煎饼、油饼等。烙饼更是群众喜爱的食品，制法吃法多种多样。在收杂粮的季节，多吃杂粮制品。现在皖北群众的日常饮食结构发生变化，农村杂粮和米饭兼吃，这是群众生活水平提高的表现。
